Asian Peanut Pasta Salad

This Asian Peanut Pasta Salad is packed with flavor, yet simple.

Ingredients and Variations

Ingredients: spaghetti noodles, slaw mix, green onions, red bell pepper, peanut butter, soy sauce, rice wine vinegar, toasted sesame oil, sesame seeds, garlic, ginger, Sriracha, peanuts, sugar and salt.

Variations: Chicken can be added for more protein, any veg you like can be added, use any noodle you prefer, rice noodles work great for this dish.

Ingredients

  • 1 lb spaghetti noodles, cooked to package directions, drained and cooled

  • 2 cups Cole slaw mix (shredded cabbage and carrot)

  • 1 bunch Green onions, sliced – reserve a Tbsp for the top

  • 1/2 cup dry roasted peanuts, coarsely chopped (reserve a Tbsp for the top

  • 2 tbsp toasted sesame seeds – reserve a tsp for the top

  • 1/2 cup red bell pepper, chopped

  • Peanut butter vinaigrette
  • 1/2 cup Peanut Butter

  • 1/2 cup water

  • 1/2 cup rice wine vinegar

  • 1/4 cup soy sauce or amino acids

  • 1 tbsp Sriracha sauce * optional

  • 2 tsp toasted sesame oil

  • 1 tbsp sugar

  • A pinch salt

  • 2 cloves garlic, minced

  • 1 tbsp ginger, minced (paste)

Directions

  • Whisk all ingredients together for peanut butter vinaigrette, then fold all the salad ingredients in and top with leftover peanuts, green onions and sesame seeds. Refrigerate for 2 hours before serving.
  • Enjoy something different!
