Potato, egg, ham, bacon and cheese! What more does one need?? Super delicious and made with canned potatoes.

Ingredients

  • 3 cups Canned potatoes, cubed

  • 1 Small onion, chopped

  • 2 tbsp Butter

  • 4 oz Ham, diced small

  • 2 oz Bacon, crumbled

  • 1/4 cup Sour cream

  • 1 tsp Dried chives or fresh

  • 1/2 tsp Dried parsley or fresh

  • 1/2 tsp Onion powder

  • 1/2 tsp Garlic powder

  • pinch of cayenne

  • 1/2 cup Shredded cheese, cheddar, smoked gouda, gruyére, swiss, pepper jack.. whatever you like

  • Salt & pepper to taste

  • 4 Large eggs

Directions

  • Heat oven to 375°
  • Melt butter in a pan on medium heat, sauté onions for 3 minutes then add ham and bacon. Cook another 3 minutes and turn off heat and set aside.
  • In a small bowl, mix sour cream, herbs and spices.
  • Drain potatoes and butter an 8 x 8 baking dish. Add potatoes to buttered baking dish, sprinkle with salt and pepper, carefully mix in sour cream, onion mixture and cheese.
  • Make @ 375° 20 minutes, then pull pan out making 4 wells in potatoes, crack 4 eggs, one in each well. Put back into the oven and bake an additional 12 minutes or until eggs are done.
