Ingredients
- Fries
2 Medium russet potatoes, peeled and diced
3/4 cup Cornstarch or tapioca flour
3/4 tsp Salt
1/2 tsp Fresh cracked black pepper
1/2 tsp Onion powder
1/2 tsp Paprika
1/4 tsp Cayenne pepper * optional
1 cup Shredded cheese (I use smoked gouda)
3 tbsp Half and half
Oil for frying, such as vegetable or peanut
- Seasoning
1 1/2 tsp Seasoned salt, such as Lawry’s
1/2 tsp White pepper
1 tsp Onion powder
1/2 tsp Garlic powder
Directions
- Boil potatoes until fork tender. Drain and set aside to cool for10 minutes.
- Put potatoes through a ricer, mill or mesh sieve. Add all ingredients to a bowl and stir into a dough.
- Put dough into a gallon sized freezer bag and using a rolling pin, roll into a perfect square filling the entire freezer bag. Place in freezer for 30 minutes.
- In a heavy skillet, add an inch of oil. Place heat on medium – high. The oil is ready when you put the handle of the wooden spoon in and bubbles form around it.
- Bring dough out of freezer and rip bag from around the dough, releasing it. Cut into “Fry” shape, as big as you want them. Fry for 2 minutes on each side until golden. Drain on paper towel or dry rack.
- Mix seasoning together and sprinkle fries.
- These can also be made in the air fryer by brushing them with a little oil and air fry them at 425° for 8 minutes, flipping them halfway through.
