Country Buttermilk Cake

Fussy free and at the top of my list of favorite cakes! Perfect for picnics and you can ice it with any icing or frosting you like. This is a super moist cake, best baked in a 13 x 9 or in cupcake form.

Yields 9 x 13 cake or 24 cupcakes

2 Sticks of butter, room temp

2 Cups granulated sugar

3 Large eggs, room temp

2 Tsp vanilla extract

2 1/2 Cups all purpose flour

1/2 Tsp baking soda

1 Tsp baking powder

1/2 Tsp salt

1 1/2 Cups buttermilk

Heat oven to 350 f.

Cream butter and sugar. Add eggs and vanilla. Add the rest of the ingredients, stir just until combined well.

Bake @ 350 f 20 minutes for cupcakes, 25-30 for 9 x 13 or until toothpick comes out clean.

Cool completely and frost.

Basic American Buttercream

1 Stick butter, softened

1 lb Powdered sugar

1 Tsp vanilla extract

1/2 Tsp almond extract

2 – 3 Tbsp milk

Whip all ingredients together. Add color if desired.
