Creamy Zucchini Soup

This zucchini soup is creamy and delicious, you are going to love it as a new way to use up your garden fresh zucchini!

Ingredients and Variations

Ingredients: Zucchini, potato, white onion, garlic, butter, dried dill, dried chives, onion powder chicken broth cream cheese, salt and pepper.

Variations: Yellow squash can be subbed in for zucchini, if need be, fresh jalapeños can be added for a kick, any herbs fresh or dried can be used (your choice), lemon zest can be added. Shredded carrots can also be added or any other veg you like.

Creamy, dreamy Spring / Summer soup!

Ingredients

  • 3 3 medium zucchini, grated, peel on

  • 2 2 medium potatoes, peeled and diced

  • 1 1 small white onion, chopped

  • 3 cloves 3 garlic, minced

  • 6 cups 6 chicken or veggie broth

  • 2 tbsp 2 butter

  • 1 tsp 1 dried or fresh dill

  • 1 tsp 1 dried or fresh chives

  • salt & pepper to taste

  • 3 oz 3 cream cheese

Directions

  • in a pot, cook onion and garlic in butter for 3 minutes, until soft.
  • add zucchini, potato and broth into pot with herbs and cook on medium-high for 10 minutes until potatoes are tender.
  • Add cream cheese in and cook until melted through. Purée soup using an immersion blender, food processor or blender. Salt and pepper to taste.
  • Sprinkle with fresh chives and bacon bits to serve if desired.

Notes

  • This soup freezes very well.
