If you have some home canned or store bought items on hand, you can make these quick and easy! Better than going out!!
Yields 4 servings
1 Quart enchilada sauce
1 Pint canned spicy pork or canned meat of your choice
1/2 – 1 Cup chicken broth
8 Eggs
Tortilla chips
Cheese of your choice: Cheddar, jack, queso fresco, queso cotija , oaxaca……..
Toppings – green onion, red onion, cilantro, radish, avocado, tomato, etc…..the list is endless!
In a hot frying pan, crisp up your meat, pull out of pan when its as crisp as you like it. Set aside.
Add enchilada sauce to pan and heat though. Thin out with chicken broth as needed. Toss chips in sauce and push to the edges of pan, making room for eggs. Crack eggs into the center of the pan, add cheeses and cover with a lid, cooking on low until the eggs are as done as you like them.
Sprinkle with meat and toppings. Serve hot!! Yummy!!
