Frito Pie On The Fly

This is a quick and easy version of Frito pie from my home canned pantry! You can use commercial canned goods and fresh ground beef instead. Yummy!

Here is my authentic enchilada sauce recipe!

Ingredients

  • 1 Quart Ground beef or 2 lbs fresh

  • 1 Pint Black beans, drained and rinsed

  • 1 Pint Diced tomatoes

  • 1/2 Medium onion, diced

  • 3 Cloves Garlic, minced

  • 1 Tbsp Butter

  • 2 Tbsp Tomato paste

  • 2 tsp Garlic powder

  • 2 tsp onion powder

  • 2 tsp Mexican oregano

  • 1 tsp ground cumin

  • 2 tsp Chili powder

  • 1 1/2 tsp salt

  • 1/2 tsp Fresh ground black pepper

  • 3 Cups Cheese, shredded cheddar, monterey jack, pepper jack…..

  • 4 Cups Fritos chili, cheese flavored

  • 1 Pint Enchilada sauce, optional

Directions

  • Heat oven to 350°
  • Cook onion and garlic in butter until soft. Add beef, beans, tomatoes and seasonings.
  • Pour into 9 x 13 baking dish.
  • Sprinkle with 2 cups cheese, put Fritos over the cheese and top with the last cup of cheese.
  • Bake @ 350° 20 minutes.
  • Serve with your favorite taco toppings: Enchilada sauce, shredded lettuce, black olives, chopped onions, jalapeños, sour cream, crema, tomatoes, avocados, taco sauce, salsa………

  • You can skip adding seasonings, just pour in enchilada sauce instead!
