Homemade Instant Mashed Potatoes

Preserve your potato harvest without taking up a lot of space! Flavor them your favorite way or make several varieties for lots of choices! It fun and delicious. Be creative and add some spark into your quick weeknight meals! This recipe can be doubled or quadrupled if you desire.

Ingredients and Variations

Ingredients: Gold Potatoes, salt, pepper, freeze dried butter powder, dry milk powder, freeze dried chives, garlic powder, freeze dried sour cream powder, freeze dried cheddar cheese powder, mustard powder and onion powder.

Variations: Any potato can be used, sour cream powder can be added, dried parsley can be added as well as any other spice or herb you prefer in your regular mashed potatoes.

Sour cream & Chive – 1 c potato powder +1/4 c butter powder + 1/4 c sour cream powder + 1 tsp onion powder + 1/2 tsp pepper + 2 Tbsp dried chives

Cheesy Potatoes – 1 c potato powder + 1/4 c butter powder + 1/4 c milk powder + 1/4 cup cheese powder + 1 tsp onion powder + 3/4 tsp Salt + 1/2 tsp Pepper + 1 tsp dry mustard powder

Garlic and Parmesan – 1 c potato powder + 1/4 c butter powder + 1/2 c milk powder + 1/4 c freeze dried parmesan cheese + 2 tsp garlic powder + 1tsp salt + 1/2 tsp pepper + 1 tbsp dried parsley

*Note: Dehydrate cauliflower, blend into powder and mix half and half for lower carb instant potatoes!

Store in an airtight jar for up to a year or pack into Mylar bags with oxygen absorbers and seal for long term storage.

Ingredients

  • 1 cup potato powder

  • 1/4 cup butter powder

  • 1/2 cup dry milk powder

  • 1 tsp onion powder

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 tbsp dried parsley *optional

Directions

  • Mix all together and store in an airtight jar for up to a year.
  • To Use: Add 1/3 cup potato mix to 1 cup of boiling water, cook for 2 minutes, cover, turn off heat and let set for 5 minutes.
  • Serve with gravy or extra butter and fresh herbs or as is!

Notes

  • For lower carb, mix with zucchini powder or cauliflower powder. Half and half.
