Homestyle Albondigas

This Homestyle Albondigas is hot, delicious and pure comfort!! In this soup, anything goes! Make your own and add what you have, what your family likes.

Ingredients and Variations

Ingredients: Meatballs – ground beef, ground pork, fresh cilantro, cooked rice, garlic powder, onion powder, salt and pepper. Soup – chicken broth, onion powder, garlic powder, Mexican oregano, ground cumin, chipotle chili powder, onions, garlic, gold potatoes, carrots, celery, tomatoes, zucchini, salt and pepper.

Variations: Use the ground meat of choice, Parsley can be substitutes=d for cilantro if desired. Add in all the vegetables you like. corn and cabbage make a great addition. JalapeƱos or serrano’s can be added if desired.

Toppings : Crema or sour cream, queso fresco or cotija, fresh cilantro, fresh lime wedges, shredded cabbage, slices of avocado or whatever else you like. Serve with fresh tortillas.

Ingredients

  • Meatballs
  • 1/2 lb ground beef

  • 1/2 lb ground pork

  • 1/2 cup cooked rice, cooled

  • 1/4 cup fresh cilantro, chopped

  • 1 tsp onion powder

  • 1 1/2 tsp garlic powder

  • 1 tsp salt

  • 3/4 tsp pepper

  • 1 large egg

  • Soup
  • 2 tbsp olive oil

  • 1 medium onion, chopped

  • 2 stalks celery, chopped

  • 6 cloves garlic, chopped

  • 2 15oz cans diced tomatoes, undrained

  • 2 quarts chicken broth

  • 2 medium carrots, chopped 1 1/2-inch chunks

  • 3 large potatoes, peeled and chopped 1 1/2-inch chunks

  • 2 medium zucchini, 1-inch thick quarter slices

  • 1 tbsp Mexican oregano

  • 1 tbsp onion powder

  • 2 tsp garlic powder

  • 1 tsp ground cumin

  • 2 tsp chili powder (I used chipotle)

  • 2 tsp salt

  • 1 tsp pepper

Directions

  • Meatballs – Mix all ingredients together and roll a tablespoon of meat into a ball.
  • Put the olive oil into the soup pot and sear meatballs on all sides, remove from pot and set aside.
  • After meatballs have been seared, add onion, celery and garlic to the pot in the remaining oil and cook for 5 minutes until tender, add tomatoes, broth, seasonings, potatoes and carrots, bring to a boil, turn down heat and simmer for 15 minutes, then add zucchini and meatballs, simmer for an additional 15 minutes until zucchini and meatballs are both cooked through.
  • Serve with warm tortillas and toppings of your choice.
  • This can also be made in the slow cooker .
