Delicious, slightly sweet and perfect with any dish!
Yields 9 inch pan
2 Large eggs
1/2 Cup melted butter
1/4 Cup granulated sugar
1/4 Cup honey
1 Cup buttermilk.
1 Cup cornmeal
1 Cup all purpose flour
1 Tsp baking powder
1/2 Tsp Baking soda
1/2 Tsp salt
Heat oven to 400 degrees f.
Melt butter in 9 inch iron skillet. Set aside to cool.
In a mixing bowl, whisk together eggs, buttermilk, melted butter, sugar and honey. Add in cornmeal, flour, baking powder, baking soda and salt. Stir just until incorporated.
Pour into iron skillet that butter was melted in. Bake @ 400 degrees f 20 minutes or until breat is set and slightly golden on top.
