Lemonade Concentrate (for canning)

When life gives you lemons, make lemonade concentrate…summer is calling!!! This is a quick and easy water bath canning project. Get some on your shelf today!

Ingredients and Variations

Ingredients: Lemon juice, filtered water, citric acid and granulated sugar. Thats it!

Variations: A sugar substitute suitable for canning can be switched out for real sugar if desired. Strawberries, apples, berries, mangos… fresh or frozen can be cooked down, strained and added to the lemon juice for a twist – use 1 quart per 3 quarts lemon juice if desired.

Canning

Before you begin, be sure to do the safety checks on your canner per manufacturer instructions. Always inspect your jars for chips and cracks and wash all equipment needed for the canning project, in hot soapy water.

Ingredients

  • 3 quarts fresh squeezed lemon juice

  • 3 cups filtered water

  • 3 -4 cups granulated sugar

  • 2 tsp citric acid

Directions

  • Inspect jars for cracks and chips. Wash jars, lids and rings in hot, soapy water. Prepare canner filling with water, bring to a simmer with jars in it, for 20 minutes. Do NOT boil!
  • Add juice, water and sugar to a large pot, bring to a boil, cover and turn heat down to a simmer for 10 minutes.
  • Fill each jar leaving 1/4-inch headspace, add 1/4 tsp of citric acid to each jar. wipe rims and add lids and bands to fingertip tight. Place directly into simmering water bath canner.
  • Process for 10 minutes adding 5 minutes appropriately.
  • To Use: Add i pint of concentrate to 1 half gallon of water!
