Spiced Sugar Plum Jam

A great make ahead gift idea for the holiday’s! When plums are in season, you can make this up in a flash, its plum easy and delicious!

Yields 5 half pints

3 lbs Plums, washed, pitted and chopped

2 Cups granulated sugar

6 Tbsp bottled lemon juice

1 Tsp ground cinnamon

1/4 Tsp ground ginger

1/8 ground clove

1/8 Tsp fresh grated nutmeg

1/2 Tsp ground cardamom

Put all ingredients into a large pan and cook for 30 minutes on medium high. Using a masher, mash cooked plums. Cook until gel stage (about 40 minutes).

Tip: Put spoons into a freezer when you start. Use your frozen spoons to test how your jam is setting up.

Fill hot jars to 1/4 inch headspace. Process according to your altitude. I processed mine 10 minutes for 1,100 ft above sea level. Make sure you know yours! https://nchfp.uga.edu/publications/publications_usda.html
