This jam makes for easy, festive appetizers! Plus…it is a wonderful gift to give!! As beautiful as it is delicious.

Yields 7 half pints
4 Medium sweet onions, sliced thin
1 Tbsp EVOO
1/4 Cup granulated sugar
2 Tbsp white wine vinegar
6 Large tomatoes, peeled, cored, seeded and diced
3 1/2 Cups dried figs, sliced
1/2 Cup bottled lemon juice
4 Cups granulated sugar
Add EVOO and onions to heavy bottom pan and cook onions on low for 15 minutes. Then add 1/4 cup sugar and vinegar and cook for another 20 minutes until caramelized. Pull out of pan and set aside.
Add figs and tomatoes to pan and cook on medium 20 minutes, stirring frequently. Then add lemon juice, sugar and onions to tomato mixture. Cook over medium heat 20 minutes until thickened. Use frozen spoons to check consistency.
Fill hot jars to 1/2 inch headspace. Process 15 minutes at sea level adding the correct time for your altitude.
