Grapefruit Loaf Cake

As refreshing as it is delicious! The taste of spring here in the valley. This cake will be a beautiful addition to any special occasion or gathering.

1 1/2 Cups all purpose flour

1 Cup granulated sugar

2 Tsp baking powder

3/4 tsp salt

1/3 Cup fresh squeezed grapefruit juice, divided

1 Tbsp grapefruit zest

2 Large eggs, room temp

1/3 Cup oil

2 Tsp vanilla extract

1 Cup Greek yogurt (plain or vanilla)

1/2 Cup powdered sugar

Pinch of salt

Set your oven to 350 degrees. Spray your loaf pan or grease and flour it.

Whisk together flour, salt and baking powder. Set aside.

Whisk together granulated sugar and all the wet ingredients. Save powdered sugar and 1 tbsp grapefruit juice for glaze.

With a wooden spoon, mix both wet and dry ingredients together. Do NOT over mix!

Poor into prepared loaf pan and bake @ 350 degrees for 50 minutes.

Toothpick should come out clean when done. Cool in pan 15 minutes, then dump the cake out onto a cooling rack and cool completely.

Make the glaze by whisking powdered sugar, 1 tbsp grapefruit juice and a pinch of salt. Pour over cake when completely cooled and viola! Its cake time!
