Mexican Treasure Chest (The Unfried Ice Cream)

This Mexican Treasure Chest is a real treat! Quick and easy to make. Perfect for your next taco night!

Ingredients and Variations

Ingredients: Vanilla ice cream, corn flakes, coconut, honey, ground cinnamon and a pinch of salt.

Variations: Use your favorite ice cream (strawberry works great for this). Cinnamon can be added or let out, any spice you like can be added. Maple can be used in place of honey if desired.

The Unfried Ice Cream!

Ingredients

  • 3 cups 3 vanilla ice cream

  • 1 cup 1 corn flakes

  • 1/2 cup 1/2 shredded coconut

  • 2 tbsp 2 honey

  • pinch pinch salt

  • 1/8 tsp 1/8 ground cinnamon

Directions

  • heat oven to 300 degrees.
  • remove ice cream and let set on the counter to soften.
  • Mix corn flakes, coconut salt, cinnamon and honey together. Pour onto a lined baking sheet, spreading out.
  • Toast in a 300 degree oven for10 minutes, stirring at the 5 minute mark. Cool completely before layering.
  • In a freezer safe container sprinkle a a one third of the cornflake mixture evenly over the bottom of the container. spread half of the softened ice cream over the corn flake mixture, then repeat ending with a layer of corn flakes on top. put the lid on and freeze for at least 2 hours.
  • To Serve: Flip out onto a cutting board or serving platter and cut into slices. Serve with a drizzle of honey, chocolate syrup or strawberry sauce.
