Very few ingredients are needed for these delicious little appetizers and they are always a crowd pleaser!
Stuffed Jalapeños

10 Large Jalapeños
8 oz Chorizo
5 Cloves Garlic, minced
8 oz Cream cheese, room temp
2 Cups Monterey jack cheese, shredded, divided
Directions
- Prepare jalapeños by cutting off tops, slice them lengthwise and remove core, seeds and veins. Lay them on a baking tray.
- Preheat oven to 375°.
- Cook chorizo and remove any extra grease from the pan. Add in garlic and cream cheese and cook until cream cheese is mixed in well. Mix in 1 1/2 cups shredded cheese and set mixture aside to cool.
- Using 2 teaspoons, fill each jalapeño. Sprinkle remaining half cup of cheese over top and bake @ 375° degrees 20 minutes or put them on your grill!

Notes
- If you happen to have leftovers, the next day chop them up and put them into an omelette! Yummy!
