Pumpkin Bread

The taste of Autumn in your first bite! I have been making this bread every Autumn for almost 30 years now and still love this recipe!

Yields 2 standard loaves

Ingredients

  • 3 1/2 cups 3 1/2 All purpose flour

  • 2 tsp 2 Baking soda

  • 1 tsp 1 Salt

  • 1 1/2 tsp 1 1/2 Ground cinnamon

  • 1 tsp 1 Ground clove

  • 1 tsp 1 Fresh grated nutmeg

  • 4 4 Large eggs, room temp

  • 3 cups 3 Granulated sugar

  • 1 cup 1 Oil

  • 2 cups 2 Pumpkin puree

  • 2/3 cup 2/3 Water

  • 1 cup 1 Nuts, chopped (I use pecans) * optional*

Directions

  • Heat your oven to 350°
  • Spray 2 loaf pans or grease and flour them if you prefer.
  • Whisk dry ingredients together and set aside.
  • Combine wet ingredients together, then add the dry. Mix until just combined. Do NOT over mix! Use a wooden spoon, not a mixer.
  • Pour batter into prepared pans and bake @ 350° 55-60 minutes. Bread is done when toothpick comes out clean.
  • Cool bread on wire rack.

Notes

  • Serve this with orange sauce, orange marmalade, butter, citrus curd…..whatever you like, it’s your kitchen, man!
