Chicken Cordon Bleu Casserole

This casserole is creamy, cheesy, delicious and its quick! You can make it lower carb by omitting the croutons on top and subbing it out for something lower in carb.

Yields 4 servings

1 Pint chicken or 1 lb shredded

4 – 6 oz ham, chopped

4 oz Swiss cheese

Heat oven to 350 degrees f.

Layer in a buttered 8 x 8 baking dish.

Sauce

3 Tbsp butter

2 Tbsp onion, finely chopped

3 Tbsp flour

1 1/4 Cups water or chicken broth

1/2 Cup Half n half

1 Tbsp dijon mustard

3/4 Tsp powdered chicken bullion if using water

3/4 Tsp salt

1/2 Tsp pepper

1/2 Tsp onion powder

1/4 tsp garlic powder

Pinch of cayenne

1/4 Cup grated parn

Mely butter on medium heat, add onion and cook 3 minutes, just until they start to get soft. Whisk in flour to make roux, cook 3 minutes and add water and cream. Add the rest of the ingredients and whisk until cheese is melted and sauce is smooth.

Pour over chicken mixture.

Topping

1 Bag salad garlic croutons

1 Tbsp EVOO

1/4 Cup grated parm

Crush croutons and add oil and parm, mix well and sprinkle evenly over casserole.

Bake @ 350 degrees f 20 – 25 minutes until golden brown and bubbly!
