Cheddar Cheese Puffs

1 1/2 cups Sharp cheddar cheese, shredded & room temp
1 Large egg white, room temp
1/4 tsp Salt
1/2 tsp Cream of tarter
1/8 tsp Cayenne pepper
2 tbsp Dijon mustard
2 tbsp Butter
6 slices Bread
Directions
- Set oven to broil.
- Whisk egg white with cream of tarter, salt and cayenne until frothy. Stir in cheese until well mixed. Set aside.
- Cut 24 rounds of bread from bread slices, 1 1/2 inch.
- Lightly butter the top of each round then spread a thin layer of dijon over the butter. Mound cheese mixture on top of each round, about 1 1/2 tsp for each.
- Broil for 3 – 4 minutes until bubbly and golden.
- Serve right away.
