Meatloaf & Potato Casserole

An All-in one dinner, this Meatloaf & Potato Casserole is the ultimate delicious comfort food! A true family favorite. Use your favorite meatloaf recipe!

Ingredients and Variations

Ingredients: Lean ground beef, eggs, Cheese crackers, Worcestershire sauce, Dijon mustard, garlic powder, onion powder freeze dried onions, fresh onion, half and half, fresh parsley, ketchup, bbq sauce, brown sugar, russet potatoes, cream cheese, butter, extra sharp cheddar, salt and pepper.

Variations: Any ground meat or poultry can be used, seasonings can be changed out for your choice, dehydrated onions or soup mix can be used in place or freeze dried. Red or gold potatoes can replace russets. bbq sauce and sugar are optional. Shredded cheese can be added into the meatloaf.

Ingredients

  • Meatloaf
  • 1 lb lean ground beef

  • 1 1/2 cups cheese crackers, crushed

  • 2 large eggs

  • 1/4 cup half and half

  • 1 tbsp Worcestershire sauce

  • 1 tbsp Dijon mustard

  • 1 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 tsp garlic powder

  • 1 tsp onion powder

  • 3 tbsp dried minced onion

  • 2 tsp parsley, fresh or dried

  • Meatloaf Topping
  • 1/2 cup Ketchup

  • 2 tbsp bbq sauce

  • 1 tbsp brown sugar

  • 1/2 tsp pepper

  • Potatoes
  • 3 lbs russet potatoes, peeled, cubed and cooked

  • 2 oz cream cheese

  • 4 tbsp butter

  • 1 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp onion powder

  • 1/2 cup half and half

  • Extra
  • 2 cups shredded extra sharp cheddar cheese

  • 1/2 cup onion, chopped *optional

  • 2 cups Cooked vegetables such as corn, carrots, green beans or peas * optional (canned or frozen work great)

Directions

  • Heat oven to 350°
  • Meatloaf: Mix all ingredients together and press meat loaf into the bottom of a greased 9 x 13 casserole dish.
  • Mix ketchup, bbq sauce, pepper and sugar together and spread over meatloaf, sprinkle with 1/2 cup chopped onions if desired and bake at 350° for 45 minutes or until cooked through.
  • Mash cooked potatoes with salt, pepper, onion powder, butter, cream cheese and cream.
  • Spread potatoes over cooked meatloaf, cover with shredded cheese and bake at 350° for another 15 minutes. Let cool 10 minutes before cutting and serving. *optional – you can sprinkle vegetables on the meatloaf before spreading the potatoes on if desired.
