Apple & Smoked Gouda Chicken Sausage

These are better than any store bought apple sausage out there, plus NO preservatives, its homemade and freezer friendly!! Make up a big batch today and freeze them to have on hand!

Ingredients

  • 6 lbs 6 Ground chicken breast

  • 4 tbsp 4 Butter, grated (cold)

  • 6 6 Fuji apples, peeled and grated

  • 16 oz 16 Smoked gouda cheese, grated

  • 1 1 Large sweet onion, grated

  • 4 tbsp 4 brown sugar

  • 1 tbsp 1 Garlic powder

  • 1 tbsp 1 Onion powder

  • 3/4 tsp 3/4 Cayenne pepper

  • 2 1/2 tbsp 2 1/2 Kosher salt

  • 1 tbsp 1 Fresh ground black pepper

  • 3/4 tsp 3/4 Fresh grated nutmeg

  • 1 tbsp 1 Sweet paprika

  • 1 tsp 1 Poultry seasoning

  • 2 tbsp 2 Dried parsley

  • 1 tbsp 1 Allspice berries, ground fine in a coffee grinder

  • 1 tbsp 1 Whole coriander, ground fine in a coffee grinder

Directions

  • Grind chicken breast or use already ground. Grate butter, onions, cheese and apples on box grater and add to chicken.
  • In a small bowl, mix all seasonings and sugar together.
  • Pour seasoning into chicken mixture and mix everything together well. Form into patties or fill sausage casing according to your machine directions. Cook right away or place them on a parchment paper lined cookie sheet and freeze 2 hours or until firm, place them in a labeled Ziplock freezer bag and freeze up to 3 months.
