Apple & Smoked Gouda Chicken Sausage

6 lbs Ground chicken breast
4 tbsp Butter, grated (cold)
6 Fuji apples, peeled and grated
16 oz Smoked gouda cheese, grated
1 Large sweet onion, grated
4 tbsp brown sugar
1 tbsp Garlic powder
1 tbsp Onion powder
3/4 tsp Cayenne pepper
2 1/2 tbsp Kosher salt
1 tbsp Fresh ground black pepper
3/4 tsp Fresh grated nutmeg
1 tbsp Sweet paprika
1 tsp Poultry seasoning
2 tbsp Dried parsley
1 tbsp Allspice berries, ground fine in a coffee grinder
1 tbsp Whole coriander, ground fine in a coffee grinder
Directions
- Grind chicken breast or use already ground. Grate butter, onions, cheese and apples on box grater and add to chicken.
- In a small bowl, mix all seasonings and sugar together.
- Pour seasoning into chicken mixture and mix everything together well. Form into patties or fill sausage casing according to your machine directions. Cook right away or place them on a parchment paper lined cookie sheet and freeze 2 hours or until firm, place them in a labeled Ziplock freezer bag and freeze up to 3 months.
