Asian Style Cucumber Salad

This Asian Style cucumber salad is as refreshing as it is delicious! Perfect for summer!

Ingredients and Variations

Ingredients: English cucumber, soy sauce, rice wine vinegar, garlic, ginger, toasted sesame oil, toasted sesame seeds and sriracha.

Variations: Use any cucumber you like, red pepper flakes can be added for extra heat if desired, Coco amino acids can replace soy sauce if desired. Sliced scallions can also be added.

Serving Suggestion: This can be eaten as a side dish, salad, appetizer or put on top of a cooked salmon and served that way (it’s delicious!)

Ingredients

  • 2 cups Cucumber, peeled and sliced thin, grated or in ribbons

  • 1/4 cup soy sauce

  • 1/4 cup rice wine vinegar

  • 2 cloves garlic, minced

  • 2 tsp ginger, minced

  • 2 tsp toasted sesame seeds

  • 1 tsp toasted sesame oil

  • 2 tsp Sriracha sauce *optional

Directions

  • Mix all ingredients together and refrigerated for at least 2 hours.
  • Store in an airtight container in the refrigerator and it will last for 2 weeks.
