Autumn Harvest Morning Muffins

- Muffins
3 Large eggs
1/2 cup Oil, vegetable, canola or corn
1/2 cup Granulated sugar
1 cup Grated carrot
1 cup Grated apple
1/2 cup Raisins or other dried fruit
1 tsp Vanilla extract
1 tsp Ground cinnamon
1 tbsp Baking powder
1/2 tsp Salt
1 cup All purpose flour
1 cup Whole wheat flour
- Filling
4 oz Cream cheese, softened
1 tsp Vanilla extract
1/2 cup Powdered sugar
Directions
- Heat oven to 375°. Grease a muffin tin with 12 wells or use liners.
- Mix all ingredients for muffins, just until incorporated, do not over mix.
- Mix everything for filling.
- Using a scoop, put one scoop of muffin batter in well, add a scoop of filling and another scoop of muffin batter over filling.
- Bake @375° for 25 minutes.
- Cool on a wire rack.
