Ingredients

  • Muffins
  • 3 3 Large eggs

  • 1/2 cup 1/2 Oil, vegetable, canola or corn

  • 1/2 cup 1/2 Granulated sugar

  • 1 cup 1 Grated carrot

  • 1 cup 1 Grated apple

  • 1/2 cup 1/2 Raisins or other dried fruit

  • 1 tsp 1 Vanilla extract

  • 1 tsp 1 Ground cinnamon

  • 1 tbsp 1 Baking powder

  • 1/2 tsp 1/2 Salt

  • 1 cup 1 All purpose flour

  • 1 cup 1 Whole wheat flour

  • Filling
  • 4 oz 4 Cream cheese, softened

  • 1 tsp 1 Vanilla extract

  • 1/2 cup 1/2 Powdered sugar

Directions

  • Heat oven to 375°. Grease a muffin tin with 12 wells or use liners.
  • Mix all ingredients for muffins, just until incorporated, do not over mix.
  • Mix everything for filling.
  • Using a scoop, put one scoop of muffin batter in well, add a scoop of filling and another scoop of muffin batter over filling.
  • Bake @375° for 25 minutes.
  • Cool on a wire rack.
