Broccoli Cheddar Cowder in the Crockpot!

Easy peasy, super delicious and ready when you are!

1 lb Frozen broccoli spears

2 Potatoes, peeled and diced

1 Small onion, chopped

1 Medium carrot, shredded

2 (14.5 oz) Cans chicken broth

1 1/2 Tsp onion powder

1 1/2 Tsp garlic powder

1/2 Tsp salt

1/2 Tsp pepper

1/4 Tsp cayenne pepper

1 Can evap milk

1/4 Cup cornstarch

6 oz Velveeta cheese

1/2 Cup heavy cream

6 oz Cheddar cheese, shredded

In a crockpot, add broccoli, onion, potato, carrot, seasonings and broth. Cook on high 3 hours.

Mix evap milk and cornstarch inti a slurry and add to crockpot after cooking for 3 hours. Stir well and add Velveeta. Cook another 15 minutes.

Add cream and cheddar, cook another 15 minutes.

Done!

Serve with extra cheese, sour cream, chives, scallions, bacon….. Anything you like!
