Broccoli Cheese & Rice Casserole

A traditional Thanksgiving side dish in our family! This casserole is creamy, cheesey and custard like, not dry like most rice casseroles. It has the perfect amount of rice per sauce ratio!! I believe it to be, the perfect casserole!

Yields 9 x 13 casserole

1 – 2 Tbsp butter

1 Small onion, diced

1 Can cream of chicken soup

1/2 Cup milk

1/4 Cup chicken broth

1 Cup Velveeta cheese, diced

1/2 Tsp onion powder

1/2 Tsp garlic powder

1/2 Tsp fresh ground black pepper

1 Cup rice, cooked

1 lb broccoli, chopped and steamed

Heat oven to 35 degrees f.

Grease 9 x 13 casserole dish

Saute onion in butter on medium heat 5 minutes. Add broth, milk, soup, cheese and seasonings. Cook on medium low untill cheese is melted and sauce is smooth. Stir in rice. Fold in broccoli last and pour into prepared casserole dish.

Bake @ 350 degrees f 45 minutes or until top is golden brown.
