Remember the cabbage soup diet from the 80’s?? This is the soup!! As well as I can remember, except I did not add onion soup mix, but you can. You can add other veg as well or even meat to make into a meal. However you make it, its delicious!
1 Medium head of cabbage, chopped
2 Cans diced tomatoes or tomatoes with peppers (I use Ro-tel)
1 Green bell pepper, chopped
1 Large onion, chopped
4 Ribs celery, chopped
8 – 12 Cups broth (I use chicken) Depends how soupy you like it
*4 Chipotle bullion cubes (optional)
Add it all to a big pot bring it to a boil, reduce simmer for 1 1/2 hours. Taste for flavors, add salt & pepper as needed.
You can add potatoes, carrots, kale, spinach, basil, parsley, jar of pasta sauce……….
