Cathedral Window Cookies

These old fashioned Cathedral Window Cookies are as delicious as you remember! Make some, they will be a beautiful addition to your holiday cookie plate!

Ingredients and Variations

Ingredients: Multi colored fruity mini marshmallows, Semi sweet chocolate chips, butter, sweetened shredded coconut.

Variations: Add a half cup of chopped toasted walnuts or pecans. Milk or dark chocolate can be used in place of semi sweet chocolate.

Ingredients

  • 1 12 oz bag chocolate chips (I use semi sweet)

  • 1 12 oz bag multi color fruity mini marshmallows

  • 1/2 cup butter

  • 8 oz shredded coconut

  • 1/2 cup nuts, toasted and chopped * optional

  • a pinch salt

Directions

  • Melt chocolate and butter in microwave safe bowl stirring every 30 seconds until melted and smooth.
  • Stir in marshmallows and nuts if adding them into the melted chocolate.
  • On a peice of plastic wrap, sprinkle a row of shredded coconut and spoon chocolate mixture over, sprinkle with more coconut and rollup tightly, refrigerate for 2 hours until set.
  • With a sharp knife slice cookies 1/2 inch and store in an airtight container, they will keep for 4 weeks.
