Country Ham & Potato Soup ~ Pressure Canning

This is hands down my very favorite potato soup! It is the one I grew up eating, as it is the one my grandma (Nonny) always made. I love to have this on my shelf at the ready. If you don’t can, just make a big pot of this up for a family dinner on a cold night! It warms you to the bones!

Yeilds 7 Qts

14 Cups chicken broth

14 Large potatoes, peeled and cubed in 1 inch pieces

1 3/4 Cup chopped onions

2 1/3 Cups ham, cubed small

Prepare jars and canner.

Fill jars halfway with potatoes, then add to each jar 1/4 cup onions, 1/3 cup ham.

Fill jars to 1 inch with broth, de-bubble, wipe rims with vinegar, add lid and ring.

Process quarts 90 minutes, pints 75 minutes at your pressure for your altitude.

To serve: Heat up and add 1/4 cup heavy cream. Top with desired toppings such as sour cream, bacon bits, fresh herbs, cheese. Or change it up by adding broccoli and cheddar or cream cheese and chives……. Whatever you like!!
