Crab Stuffed Manicotti

A delicious spin on manicotti for the seafood lover! I could eat this every week!

Yields 4 – 6 Servings

12 Manicotti noodles

Cook noodles as directed. Put them in cold water for 5 minutes to cool slightly, so you can handle them.

Filling:

1 Cup ricotta cheese

2 Egg yolks

1/2 Cup fresh spinach, chopped

1 Cup crab meat, picked through for shells

2 green onions, chopped fine

1/2 tsp dried basil or 1 Tbsp of fresh, chopped

Salt & pepper to taste

Mix all ingredients together, putting crab in last, so not to break it up too much.

Carefully stuff your noodles and put them in an oiled 9 x 13 baking dish.

Bechamel Sauce:

4 Tbsp butter

4 Tbsp flour

2 Cups water

2 Cups whole milk

1 Tsp chicken bullion powder

Pinch of nutmeg

Salt & pepper to taste

1 Cup parm & mozzarella cheese mixed, for top

Over medium heat, melt butter in pan, whisk in flour and cook for 3 minutes. Slowly add in water and milk. Cook until thickened slightly. Add in seasonings. Pour over noodles right away and top with cheeses.

Bake @ 350 for 20-25 minutes, until top is slightly golden brown and cheeses are melted.
