This festive chicken is quick, easy, delicious and will feed a couple people or you can pop an entire pan into the oven to feed a crowd!
Yields 6
3 Chicken breast, cut in half lengthwise
2 Tbsp butter
Salt & pepper to taste
1/2 Cup blood orange marmalade
2 Tbsp brandy
1/4 Cup dried cranberries
Juice & zest of 1 orange or lemon
1/2 Cup water
Sprinkle chicken with salt and pepper.
In a hot pan, melt butter and add chicken. Sear on both sides 2 – 3 minutes. Pull out of pan and set aside.
In hot pan with heat OFF, add brandy, water, zest, juice, cranberries salt ans pepper. Stir well, add chickenm back in, cover and cook on medium low 15 minutes.
Spoon sauce over chicken to serve.
