Crockpot Cheesy Kielbasa, Potato & Cabbage Soup

Ingredients

  • 6 cups Chicken broth

  • 6 to 7 oz Kielbasa, sliced or chunked

  • 2 tbsp Butter

  • 1 Small onion, chopped

  • 1/2 head Medium sized cabbage, chopped

  • 1 tsp Dried parsley

  • 1 tsp Garlic powder

  • 1 tsp Onion powder

  • 1/2 tsp Paprika

  • 2 Potatoes, diced

  • 1/2 cup Cheese, American, cheddar, smoked gouda, swiss… (I use Velveeta), use what you like

  • 1/4 cup Cornstarch

  • 1/2 cup Heavy cream or sour cream

  • Salt & pepper to taste

Directions

  • Sauté onions and cabbage in 2 butter 5 minutes.
  • To you Crockpot, add broth, kielbasa, onions, cabbage and spices. Cook on low 4 hours.
  • After 4 hours add the potatoes. Cook for 3 additional hours on low.
  • Mix cornstarch into cream and add to Crockpot, stir well. Add cheese and cook for an additional 30 minutes.
  • Add salt and pepper to taste, enjoy!
