Curried Carrot Butter ~ For The Freezer

This butter is delicious! I was pleasantly surprised, I was not expecting to like it, truthfully. As I do love curried carrot soup, I thought I’d give it a try. I did alter the recipe slightly using dark brown sugar instead of honey, I also doubled up on the sugar, it just wasn’t sweet enough as I would expect from a “butter”. The dark brown sugar deepened the color but it was delicious.

I also added the zest of 2 limes and the juice.

I used a can of “lite” coconut milk from my cupboard because that is what I had. Next time I will use a full fat sweetened. Yes, there will be a next time!

My additional thought……. this would be very festive to make during the holidays, leave out the curry and instead add cinnamon, clove and nutmeg.
