A real holiday time saver and so good!
5lbs Potatoes, peeled, rinsed and cubed
8 oz (1 brick) Cream cheese, softened
1/2 Cup (1 stick) butter, melted
1 Cup sour cream
2 Tsp salt
3/4 Tsp white pepper
2 Tsp onion powder
1 Tbsp dried parsley
2 Egg whites
1/2 Cup half and half
1/2 Cup heavy cream
Cook potatoes until tender.
Mix other ingredients.
Mash potatoes and mix all ingredients together.
Pour into a buttered 9 x 13 in casserole dish.
Cool, cover and refrigerate until ready to bake.
Dot butter on top of potaoes. Bake @ 350 degrees f uncovered until golden brown, about 1 hour.
You can add fresh herbs to the potatoes, cheese, boursin cheese…. You can add cheese or breadcrumbs to the top before baking…. After it comes out of the oven you can top with fresh herbs, parm, fried shallots, french fried onions……
