3 – 3 1/2 cups Bread flour
1 1/2 tsp Salt

Cheese, pickled jalapenos, everything bagel seasoning, dried onions, dried garlic, bacon, herbs, etc…..anything you like!
Directions
- Add sugar and yeast to warm water. Let set 10 minutes.
- Add the rest of the ingredients into the yeast mixture and mix until it forms a dough, knead by hand 10 minutes or 7 minutes in the mixture using a dough hook. Add in additional 1/2 cup flour as needed while kneading.
- Cover and let rise 1 hour.
- Punch dough down, cover and let set 10 minutes.
- Cut dough into 8 equal pieces. Roll each into a ball, flatten slightly and using your finger, make a hole in the center. Put onto a tray, cover with plastic wrap and refrigerate overnight or for 30 minutes.
- Heat oven to 425°.
- Bring a pot of water to boil, add in 2 tsp baking soda, 1 1/2 tsp salt and 1 1/2 tbsp brown sugar or malt syrup. Drop bagel in 4 at a time or however many will fit, boil for 1 minute, flip bagels and boil another minute. Boil 2 minutes each side for a more chewy bagel.
- Place bagels on pan, add desired toppings and bake 15 – 20 minutes @ 425°.
