  • 1 1/2 tbsp 1 1/2 Malt syrup, brown sugar or honey

  • 3 – 3 1/2 cups 3 – 3 1/2 Bread flour

  • 1 1/2 tsp 1 1/2 Salt

  • Toppings
  • Cheese, pickled jalapenos, everything bagel seasoning, dried onions, dried garlic, bacon, herbs, etc…..anything you like!

Directions

  • Add sugar and yeast to warm water. Let set 10 minutes.
  • Add the rest of the ingredients into the yeast mixture and mix until it forms a dough, knead by hand 10 minutes or 7 minutes in the mixture using a dough hook. Add in additional 1/2 cup flour as needed while kneading.
  • Cover and let rise 1 hour.
  • Punch dough down, cover and let set 10 minutes.
  • Cut dough into 8 equal pieces. Roll each into a ball, flatten slightly and using your finger, make a hole in the center. Put onto a tray, cover with plastic wrap and refrigerate overnight or for 30 minutes.
  • Heat oven to 425°.
  • Bring a pot of water to boil, add in 2 tsp baking soda, 1 1/2 tsp salt and 1 1/2 tbsp brown sugar or malt syrup. Drop bagel in 4 at a time or however many will fit, boil for 1 minute, flip bagels and boil another minute. Boil 2 minutes each side for a more chewy bagel.
  • Place bagels on pan, add desired toppings and bake 15 – 20 minutes @ 425°.
