Easy Sofrito

Add flavor to any dish with sofrito! Make a big batch, freeze it in ice cube trays, keep them in a freezer bag so you can add flavor to your dishes anytime!

Yields about 1 quart

Ingredients

  • 2 bunches Fresh cilantro, washed well

  • 2 Large onions, quartered

  • 1 – 2 heads Garlic, peeled

  • 1 Red bell pepper, seeded and diced large

  • 1 Green or orange bell pepper, seeded and diced large

  • 2 Cubano peppers, seeded and diced large

Directions

  • Toss it all in a blender for puréed consistency or food processor for chunkier consistency.
  • Freeze in ice cube trays, then transfer to a freezer bag. Will keep in your freezer for up to 6 months.

Notes

  • This is a basic recipe, good for use during canning. You can add salt, oil, sugar and other spices to keep in your freezer if you prefer.

  2. Made this when I canned the Puerto Rican Black Beans which are 5 star!!!! Had some left over so I did your suggestion and put that in an ice cube tray, froze them then popped them out into a freezer bag for future seasoning my recipes. So today used a cube in my home canned chicken soup . .OH YEA!!! thanks for the recipe it’s awesome and I will always keep some in my freezer now.
