Egg Salad Deviled Eggs

These are good for a low carb lunch or as an appetizer! My very favorite among the deviled egg community!!

Yields 12

6 Hard boiled eggs, cooled, peeled and washed, sliced in half

1 1/2 Tbsp minced onion

1 1/2 Tbsp minced dill pickle

1/4 Tsp dijon mustard

1/3 Cup mayo

1 Tbsp lemon juice

Salt and pepper to taste

Paprika for garish

Take the yolk out of the whites and add them to food processor aling with the rest of the ingredients except paprika. Blend well.

Spoon filling into ziplock bag, cut the corner off, fill egg whites. Top each with a pinch of paprika.

And viola! Lunch!!
