Flour tortills are easy and more cost effective to make rather than going out to purchase them. Plus, YUM!!!! They are delicious!
Yields 12 tortillas
2 1/2 Cups allpurpose flour
3/4 Tsp salt
3 Tbsp lard, butter, shortning or bacon fat (level tablespoons!)
1 Cup + 1 to 2 Tbsp very hot water (maybe more or less for you its dry in the desert here!)
In a stand mixer , using dough hook (or by hand) add flour, salt and fat. Turn on mixer and 3/4 cup hot water, as dough mixes, add water by tablesppon as needed. Knead dough 5 minutes. Dough should be soft, not sticky.
Portion dough out into 12 peices. With greased hands, roll each out into a ball, cover them and let them rest 20 minutes. Do NOT let them dry out!
On a lightly floured surface, roll into an oval using a rolling pin, tun dough and roll from center to edge, forming a circle. Roll out untill you start seeing the countertop throuth the dough.
Put on hot comal or skillet, cook on both side until toasted brown spots, about 1 1/2 minutes per side.
When you pull them off the heat, keep them covered so they do not dry out.
