Golden Apple Pie

Autumn is in the air! This pie is “that” something different that you have been searching for! A cross between a butter tart and an apple pie. With it’s buttery flavor and beautiful meringue, this pie is perfect for your Thanksgiving table!

Yield 1 9″ pie

1 9 inch Pie crust, unbaked

1 1/2 Cups chopped apple

1 Tbsp water

3/4 Cup light brown sugar

Zest of 1 lemon

Juice of 1/2 lemon

Pinch of ground clove

1/4 Tsp ground cinnamon

1/2 Cup butter, cold

2 Large eggs, room temp and separarted

1/3 Cup sugar

Heat oven to 350 degrees f.

On medium heat, cook apples, water and sugar until apple soften, about 10 minutes.

Put apple through a food mill or food processor and put back into pan. Add juice, zest and cold butter to cool mixture down. Add egg yolks when mixture is cool and return to medium heat. Cook just until mixture starts to thicken.

Pull off heat and poor into unbaked pie crust.

Bake @ 350 degrees f 20 minutes.

While pie is baking, pour room temp egg whites into bowl and whip to stiff peak stage using a mixer. Whip in sugar.

At the 20 minute mark, pull pie out of the oven and top with meringue, return to oven and bake 10 minutes longer.

Cool for 1 hour on countertop, then refrigerate overnight.
