Greek Chicken Patties With Tzatziki Sauce

These are quick, easy and delicious! I came up with recipe from a You Tube challenge I did and they were so delicious, I had to share. These I will make a thousand times! If you need to whip up a quick appetizer, these can be made bite sized and baked as well.

Yields 10 – 12 patties

Tzatziki Sauce

2 Cups strained Greek yogurt, plain

1 English cucumber, peeled, seeded, grated & water squeezed out

3 Cloves garlic, crushed

1/4 Tsp white pepper

1/2 Tsp kosher salt

1 Tsp white vinegar

1 Tbsp EVOO

Make sauce at least 2 hours ahead. Mix everything together and refrigerate 2 hours.

Patties

32 oz Home canned or canned chicken

1/3 Cup mayo

3 Eggs, room temp

3 Green onions, sliced

2 Cloves garlic, crushed

1/2 Cup packed fresh spinach, chopped

1 Tbsp fresh oregano, chopped

Zest of 1 lemon

Juice of half lemon

1/2 Cup feta, crumbled

Salt & pepper to taste

Mix all together and shape in to desired size patties. Fry in hot skillet with 1/4 cup coconut oil about 4 minutes each side. Or bake on parchment paper in a 375 degree f oven for 15 minutes (depending on the size you make them).

Serve warm with cold tzatziki sauce, pitas, salad…… Yummy!!
