Greek Style Chicken Orzo Salad

This Greek Stylr Chicken Orzo Salad is so good, Great for school lunch side dish but also summer lunch!

Ingredients and Variations

Ingredients: Chicken, orzo pasta, lemons, water, chicken bouillon, garlic, fresh oregano, grape tomatoes, cucumber, olive oil, red onion, kalamata olives, Spinach, Roasted red bell pepper, feta cheese, salt and pepper.

Variations: Any extra veg you like can be added in, dried herbs can replace fresh herbs if needed. A jar of pimentos can be used instead of roasted red bell peppers. Fresh, frozen, canned or dried spinach can be used.

Ingredients

  • 1/2 lb orzo pasta

  • 1 cube chicken bouillon

  • 2 lemons, zested and juiced

  • 4 cloves garlic

  • 1/4-1/2 cup olive oil

  • 2 tsp fresh oregano, chopped

  • 1 cup grape tomatoes, halved

  • 1/2 cup cucumbers, peeled and diced

  • 1 cup chicken, cooked and cubed 1/2-inch dice

  • 1/3 cup kalamata olives, halved

  • 1/4 cup roasted red bell peppers, cut into small strips 1/2 inch long

  • 1/4 cup red onion, chopped

  • 1/2 cup Fresh spinach, chopped

  • 1/2 cup Feta cheese, cubed 1/2 inch

  • 2 cups water

  • 1 cube chicken bouillon

Directions

  • Cook the orzo in water and bouillon cube as directed on package. (Do not drain, let the orzo absorb the cooking liquid completely. Then let cool.
  • Whisk olive oil, lemon zest, lemon juice, garlic, salt and pepper. Set aside
  • Toss the rest of the ingredients into the orzo and pour dressing over top and toss until everything is evenly distributed and coated.
  • Refrigerate for at least 2 hours. Serve cold.
