Hamburger Soup (Slow Cooker)

This soup is delicious, filling, budget friendly and versatile. Change it up how you want it!

Ingredients and Variations

Ingredients: Ground beef, frozen mixed vegetables, potatoes, onion, diced tomatoes, beef broth, onion powder, garlic power, bay leaf, salt and pepper.

Variations: Any veg you link can be added, mushrooms, greens, also tomato sauce can be added for a more tomato broth, small cooked pasta can be added at the end to bulk it up, Soup can be thickened at the end and dumplings added, barley can be added at the end if desired. Italian seasoning can be added. Potatoes can be left out and soup can be served over mashed potatoes. Canned Veg-All can be used in place of frozen vegetables. Fresh vegetables can also be used. Jalapeños, Ro-Tel and Mexican spices can be added for a southwest flavor. Beans can also be added to bulk it up and stretch it further.

Ingredients

  • 1 lb ground beef

  • 1 small onion chopped

  • 2 cups frozen mixed vegetables or 2 cans Veg-All

  • 2 qts Beef broth or stock

  • 1 bay leaf

  • 2 tsp onion powder

  • 1 tsp garlic powder

  • 2 15oz cans diced tomatoes

  • salt and pepper to taste

Directions

  • brown ground beef with onion just until done.
  • into a slow cooker, add browned beef and onion, spices, veg, tomatoes and broth.
  • Cook on low for 5 hours. Add salt and pepper to taste.
  • Serve with pasta or a little cheese over the top, croutons, or anything else you like.

Notes

  • Recipe can easily be cut in half or doubled as needed!
