Homemade Manicotti

This Homemade Manicotti is easier than you think it is and tastes like you got it at an Italian cafe! Make it with white sauce, red sauce or both, your choice. These are delicious any way you serve them.

Ingredients and Variations

Ingredients: Flour, water, eggs, salt, ricotta cheese, mozzarella cheese, parmesan cheese, white pepper, dried parsley, garlic powder and white sauce.

Variations: You can change up your filling flavors, Cottage cheese (blended) can replace ricotta cheese if desired, Italian seasoning can replace parsley if desired, Use the cheese and sauce of your choice.

Ingredients

  • Crepe
  • 2 large eggs

  • 1 pinch salt

  • 1/2 c all purpose flour

  • oil or butter for cooking

  • Filling
  • 1 1/2 c ricotta cheese

  • 1 large egg

  • 1/4 c grated parmesan cheese

  • 1/2 tsp garlic powder

  • 1/4 tsp white pepper

  • 1/2 tsp dried parsley

  • 1/2 tsp salt

  • 1/2 c shredded mozzarella cheese,

  • 2 c sauce, white or tomato

  • White Sauce recipe
  • 2 tbsp butter

  • 3 cloves garlic

  • 2 tbsp ap flour

  • 2 c milk

  • 1/4 c grated parmesan cheese

  • 1/2 tsp powdered chicken bouillon

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp grated nutmeg if desired

  • 2 c shredded mozzarella cheese to top the Manicotti

Directions

  • Make crepes: whisk egg, water, salt and flour together in a bowl until smooth. Add butter to pan set on medium low, spread batter into a thin 4-inch circle, cook until set, flip and cook for another minute, remove from pan to cool. Do NOT brown.
  • Make sauce: for my white sauce – add butter and garlic to pan set on medium-low, cook garlic for 2 minutes sprinkle flour over and stir, cook for another 2 minutes and whisk in milk and seasonings, then add cheese, whisk until smooth. turn off heat and set aside.
  • Filling: Mix all ingredients together well.
  • Assemble: ladle some sauce (white or red, your choice) onto the bottom of a 9 x 13 pan, take each crepe and fill with 2 tablespoons of filling, roll up and place in pan seam side down. Pour the rest of the sauce over the top of the manicotti and sprinkle with mozzarella cheese.
  • Bake at 350° for 20 – 25 minutes uncovered. Let cool for 10 minutes before serving.
