Italian Meatball Soup

Make it in the slow cooker! This Italian Meatball soup is meaty, saucy and delicious! Serve it with fresh hot bread!

Ingredients and Variations

Ingredients: Meatballs – ground beef, ground pork, dried onions, breadcrumbs, egg, fresh parsley, whole milk, salt and pepper. soup – onion, garlic, green pepper, beef broth, fresh parsley, whole canned tomatoes, tomato sauce, olive oil, garlic powder, onion powder, basil, small pasta, salt and pepper.

Variations: Italian sausage can be used in place of ground pork in meatballs, dried herbs can replace fresh, stewed tomato or canned diced can be used instead of whole, any herbs you like can be used, rice can be added instead of pasta and any bell pepper can be used, add to it any vegetables you like.

Meaty, saucy and delicious soup!

Ingredients

  • Meatballs
  • 1/2 lb 1/2 ground beef

  • 1/2 ilb 1/2 ground pork

  • 2/3 cup 2/3 bread crumbs

  • 1/3 cup 1/3 whole milk

  • 1 1 large egg

  • 1 tbsp 1 Worcestershire sauce

  • 1 tbsp 1 onion powder

  • 2 tsp 2 garlic powder

  • 1/2 tsp 1/2 salt

  • 1/2 tsp 1/2 pepper

  • 1/4 cup 1/4 fresh chopped parsley

  • 1/4 cup 1/4 dried onions

  • Soup
  • 1 1 large onion, chopped

  • 1 1 green bell pepper, chopped

  • 4 cloves 4 garlic, minced

  • 2 tbsp 2 olive oil

  • 3 qts 3 beef broth

  • 1 qt 1 whole peeled tomatoes

  • 1 qt 1 tomato sauce

  • 1/4 cup 1/4 fresh parsley, chopped

  • 1/4 cup 1/4 fresh basil, chopped

  • 1 tbsp 1 onion powder

  • 2 tsp 2 garlic powder

  • 1 tsp 1 salt

  • 1/2 tsp 1/2 pepper

  • 2 tsp 2 sugar

  • 1 1 bay leaf

  • 1 cup 1 small pasta, like ditalini, mini bow tie

Directions

  • Soup – Cook onion, green pepper and garlic in olive oil a few minutes then add beef broth and seasonings, bring to a boil, then cover and simmer on medium-low.
  • Meatballs – Mix meat and seasonings and roll into small balls carefully drop them into simmering soup, cover and simmer for 15 minutes until meatballs are cooked.
  • Add pasta when meatballs are cooked, sir occasionally, very careful not to break up meatballs.
  • Or put everything into a slow cooker (except pasta), cook on low 6 – 8 hours or high for 4 hours, adding pasta halfway through the cooking time.
