This is so fun and has been a Halloween family favorite in this house for years! Customize it to your fam, fill it with spaghetti if you want, just put a face on it! Anything goes with this recipe. Your little gouls will love it!
Yields 4 servings
4 Large green bell peppers
1/2 Cup rice, any
1/2 lb Ground beef, cooked
2 Tbsp onion, chopped
2 Tbsp green chilis, chopped
1 Tsp garlic powder
1 Tsp onion powder
1/4 Tsp ground cumin
1 tsp chili powder
1/2 Tsp mexican oregano
Pinch of cayenne
Salt & pepper to taste
1 Cup cheese for top cheddar, moneray jack, pepper jack, your choice
1 Cup salsa, tomato sauce or marinara divided
Heat oven to 375 degrees f.
Wash and dry peppers. Cut tops off, saving them to the side. Remove seeds and membranes. Using a pairing knife, carefully carve a face into the peppers. Coat peppers with a litttle olive oil, salt and pepper. Cover and bake @350 degrees f for 20 minutes.
Cook rice per package instructions. When rice is cooked, add all ingredients except cheese and half of the salsa. Mix well and fill cooked peppers. Top with cheese and pour halhf cup salsa into bottom of pan. Bake uncovered anoth 15 minutes. Place green pepepr tops on a sepaerate oiled cookie sheet and bake 15 miutes.
To serve: Place a spoonfull of sauce from the bottom of pan, a stuffed pepper and a top! Voila! Scary good dinner!!
You can change these peppers up using, quinoa, spaghetti, orzo, all veg, all meat, sausage, chicken, extra cheese……it’s all good!!
