Mince Pie Cookies

- Cookies
1/2 cup Unsalted butter, room temp
1 Large egg, room temp
1 cup Brown sugar
1 tsp Vanilla extract
1 1/3 cup All Purpose flour
1 tsp Baking powder
1 tsp Pumpkin pie spice
1/4 tsp Salt
10 tsp Mincemeat jam
2 tbsp Granulated or raw sugar to sprinkle over the tops
- Icing
1/2 cup Confectioners sugar
1/2 tsp Vanilla
1 tbsp Milk
Directions
- Cookies
- Cream butter and sugar 3 minutes or until light and fluffy. Add egg and vanilla. Mix in flour, baking powder and spice, mix until combined.
- Line 2 cookie sheets with parchment paper.
- Using a 1 1/2 tsp scoop, place scoops onto prepared cookie sheet and flatten slightly, put 3/4 tsp of jam in the center of each cookie, scoop another 1 1/2 tsp scoop and flatten out, place on top of filling. Using a fork, seal the edges. Sprinkle each with sugar and place sheets into the freezer for 30 minutes.
- Heat oven to 400 °.
- Bake frozen cookies 12 – 14 minutes. Cool on rack.
- Icing
- Whisk together sugar, milk and vanilla.
- Drizzle over cookies.

- Change these you by using any flavor jam you like! These can also be frozen on cookie sheet, then put into a freezer bag up to 3 months ahead!
