Ingredients

  • Cookies
  • 1/2 cup 1/2 Unsalted butter, room temp

  • 1 1 Large egg, room temp

  • 1 cup 1 Brown sugar

  • 1 tsp 1 Vanilla extract

  • 1 1/3 cup 1 1/3 All Purpose flour

  • 1 tsp 1 Baking powder

  • 1 tsp 1 Pumpkin pie spice

  • 1/4 tsp 1/4 Salt

  • 10 tsp 10 Mincemeat jam

  • 2 tbsp 2 Granulated or raw sugar to sprinkle over the tops

  • Icing
  • 1/2 cup 1/2 Confectioners sugar

  • 1/2 tsp 1/2 Vanilla

  • 1 tbsp 1 Milk

Directions

  • Cookies
  • Cream butter and sugar 3 minutes or until light and fluffy. Add egg and vanilla. Mix in flour, baking powder and spice, mix until combined.
  • Line 2 cookie sheets with parchment paper.
  • Using a 1 1/2 tsp scoop, place scoops onto prepared cookie sheet and flatten slightly, put 3/4 tsp of jam in the center of each cookie, scoop another 1 1/2 tsp scoop and flatten out, place on top of filling. Using a fork, seal the edges. Sprinkle each with sugar and place sheets into the freezer for 30 minutes.
  • Heat oven to 400 °.
  • Bake frozen cookies 12 – 14 minutes. Cool on rack.
  • Icing
  • Whisk together sugar, milk and vanilla.
  • Drizzle over cookies.

Notes

  • Change these you by using any flavor jam you like! These can also be frozen on cookie sheet, then put into a freezer bag up to 3 months ahead!
