Though very budget friendly, this soup is comforting, delicious and hearty!
Minestrone Soup

Ingredients
2 tbsp olive oil
1 onion, chopped
3 stalks celery, chopped
4 carrots, sliced
4 cloves garlic, minced
2 medium zucchini, diced
2 14.5 oz cans diced tomatoes (I use the tomatoed with Italian seasoning)
2 15.5 oz cans cannellini beans, drained
1/2 lb small pasta, such as ditalini or mini shells
12 cups water or chicken broth
1 tbsp chicken bouillon if using water *optional
1 bay leaf
1 tsp dried basil
2 tsp dried parsley
salt and pepper to taste
Directions
- In a large pot over medium heat, cook onions, celery and garlic in olive oil for 3 minutes, add carrots and cook a few more minutes. Add water, seasonings, tomatoes and beans. Bring to a boil, cover turn heat to a medium-low and simmer 10 minutes.
- Add in pasta and zucchini, cover and cook until pasta is done, about 10 minutes.
- Serve with parmesan cheese if you like and fresh bread!
