Ingredients

  • 2 tbsp olive oil

  • 1 onion, chopped

  • 3 stalks celery, chopped

  • 4 carrots, sliced

  • 4 cloves garlic, minced

  • 2 medium zucchini, diced

  • 2 14.5 oz cans diced tomatoes (I use the tomatoed with Italian seasoning)

  • 2 15.5 oz cans cannellini beans, drained

  • 1/2 lb small pasta, such as ditalini or mini shells

  • 12 cups water or chicken broth

  • 1 tbsp chicken bouillon if using water *optional

  • 1 bay leaf

  • 1 tsp dried basil

  • 2 tsp dried parsley

  • salt and pepper to taste

Directions

  • In a large pot over medium heat, cook onions, celery and garlic in olive oil for 3 minutes, add carrots and cook a few more minutes. Add water, seasonings, tomatoes and beans. Bring to a boil, cover turn heat to a medium-low and simmer 10 minutes.
  • Add in pasta and zucchini, cover and cook until pasta is done, about 10 minutes.
  • Serve with parmesan cheese if you like and fresh bread!
