The absolute BEST sticky buns!

Ingredients

  • Buns
  • 1 cup 1 Warm water

  • 2 1/4 tsp (1 pkg) 2 1/4 Instant yeast

  • 1/3 cup 1/3 Granulated sugar or honey

  • 3 3 Large egg yolks

  • 3 tbsp 3 Dry milk powder

  • 4 tbsp 4 Butter, unsalted & melted

  • 1 3/4 tsp 1 3/4 Kosher salt

  • 3 – 4 cups 3 – 4 Bread flour

  • Filling
  • 4 tbsp 4 Salted butter, melted

  • 3/4 cup 3/4 Dark brown sugar

  • Topping
  • 3/4 cup 3/4 Dark brown sugar

  • 4 tbsp 4 Unsalted butter

  • 1/4 cup 1/4 Light corn syrup

  • 1/8 tsp 1/8 Salt

  • 2 tsp 2 Vanilla extract or maple

  • 1 1/2 cups 1 1/2 Chopped pecans

Directions

  • Sprinkle yeast and 1 tablespoon of the sugar over warm water. Let set for 5 minutes.
  • Add 3 cups of flour and the rest of the bun ingredients into bowl. Using dough hook attachment, on low, mix ingredients until a dough forms. Adding extra flour as needed 1/4 cup at a time. Do not exceed 4 cups of flour total. Knead for 6 minutes. Put dough into a greased bow, cover and let proof 1 1/2 to 2 hours until it has doubled in size.
  • Roll dough out into a rectangle about 1/4 inch thick. Brush melted butter over the entire surface and sprinkle with brown sugar. Roll dough up into a log, seal edges and cut into 12 buns. Cover and let set until topping is ready.
  • Grease a 9 x 13 baking pan and set aside.
  • For the topping: In a small saucepan on medium heat, cook butter, sugar and salt for 3 minutes until sugar is melted into butter. Stir in vanilla. Pour into prepared pan evenly and sprinkle with pecans.
  • Place buns on top of pecans 3 across and 4 rows. Cover with plastic wrap and refrigerate overnight.
  • The Next Day
  • Heat oven to 350°.
  • Lets buns rise in a warm place covered for 2 hours.
  • Bake buns uncovered for 25 to 35 minutes, until golden brown.
  • Let buns cool for 5 minutes then put a buttered sheet pan, or serving tray overtop of rolls and invert them onto the tray. The caramel and pecans will cascade all around the buns.
